And guess who will be there? Yup- WE WILL! This magical of evening of wine and delicious meals from Oregon’s top restaurants (ahem- like ours) is taking place 4PM-9PM Friday, August 19, 2016 at the Oregon State Fair.

Wine Paring Tips
As the name clearly implies, Pairings! is an evening filled with… well, wine pairings! To get the most out of the experience one needs to be aware of the right combinations when pairing wines and food. They don’t all go together equally well, after all.

That said, you probably don’t want to carry this sheet around with you as you’re enjoying the evening. Keep these simple tips in mind to make the most out of your wine pairings.
Avoid Pairing Bitter with Bitter
Don’t overload your tastebuds by mixing bitter foods with a bitter wine! Bitter wines can be mixed with saltier, fattier foods to bring out the hidden flavors.
Choose Wine Sweeter Than the Food
A good rule of thumb to follow is to ensure that your wine is sweeter than your food, otherwise you can expect your wine to taste bitter and tart.
Your Wine Should be More Tart Than The Food
Then again, your wine should be more tart than the food you’re munching on, otherwise you can expect the wine to taste flabby.
Earth Flavors Bring Out An Earthy Wine
Earthy food flavors (such as mushrooms) bring out fruitier flavors of an earthy wine. A winning combination!
Focus on the Wine’s Characteristics
At the end of the day, the real key is to focus on the characteristics of the wine and match accordingly. The food should heighten the flavor of the wine, not fight against it.
