Weekly Wine Notes From Brian Kemmerle
Featured Pairing of the Week
This week, I matched the 2008 Anam Cara Nicholas Estate Riesling with roasted duck and caramelized onions wrapped in phyllo dough served with an apple sage cream sauce and hazelnut apple salad.
The subtle sweetness of the wine married with the caramelized onions and the enhances the fruit in the sauce while the wines acidity refreshed the palate from the richness of the duck and the cream sauce. The flavors of the wine and the salad were similar and both made for a complimentary pairing with the strudel.
